Keep the last signed build installed. The commercial question is replacement, not a hidden toggle. Compare remaining security support against a current iOS 27 iPhone if you need Siri AI or another seven-year clock.

Do not factory-reset this phone to “force” iOS 27. The installer will never offer a train Apple does not sign for the SoC. Security patches, if any, will arrive on iOS 16.7.10 only while Apple still signs it.
